  • 1 c. white flour
  • 1 c. corn meal
  • 1/3 c. plus 3 Tbsp. sugar
  • 2 tsp. baking powder
  • pinch of salt
  • 1 c. canned pumpkin
  • 1/4 c. butter, melted
  • 2 eggs, beaten
  • 1/8 tsp. cinnamon
  • dash of mace
  • 1/2 tsp. orange extract
  • 1 1/2 tsp. orange flower water (optional)

    Mix all ingredients together in bowl; do not overmix.

    Fill muffin cups high.

    They will rise slightly.

    You can use cupcake paper cups.

    Bake in hot oven (425°) until done (about 20 to 25 minutes).
