- 2 c. sugar
- 1 c. vegetable oil
- 3 large eggs
- 1 tsp. vanilla
- 2 c. flour
- 1 tsp. salt
- 1 tsp. cinnamon
- 1 tsp. allspice
- 1 c. buttermilk
- 1 tsp. baking soda
- 1 c. persimmon pulp
- 1 c. nuts
Directions

1Combine sugar, oil, eggs and vanilla.

2Mix well.

3Sift together flour, salt and spices.

4Combine buttermilk and baking soda.

5Add sifted ingredients to first mixture alternately with buttermilk.

6Add persimmon pulp and mix well.

7Stir in nuts.

8Pour batter into greased and floured tube pan.

9Bake at 300° for 75 minutes.

10Cool and frost with Buttermilk Frosting (recipe follows).
