  • 3 c. cooked, mashed sweet potatoes
  • 1 c. sugar
  • 1/2 tsp. salt
  • 2 eggs, well beaten
  • 1 c. brown sugar
  • 1 c. broken pecans
  • 1/4 c. margarine
  • 1/4 c. margarine
  • 1/2 c. canned milk
  • 3 tsp. vanilla
  • 1/2 tsp. cinnamon
  • 1 (8 oz.) can crushed pineapple

    Mix

    potatoes, sugar, salt, eggs, 1/4 cup margarine, milk, vanilla, cinnamon and pineapple.

    Grease a 3-quart casserole and fill with mixture.

    Combine brown sugar, flour, pecans and remaining 1/4 cup margarine.

    Sprinkle on top of sweet potatoes. Bake, uncovered, 30 minutes at 350°.
