Ingredients

  • 1 lb. ground beef
  • 4 c. water
  • 1 c. diced celery
  • 2 tsp. salt
  • 1 bay leaf
  • 1 large can whole, crushed tomatoes
  • 1 c. chopped onion
  • 1 c. cut up carrots
  • 1 c. cubed, pared potatoes
  • 1/8 tsp. pepper
  • 1/8 tsp. basil
  • 1 box frozen green beans
  • 2 c. beans
  • 2 qt. water
  • smoked pork hocks (about 1 1/2 lb.) or smoked sausage or beef
  • 2 carrots, chopped
  • 1 large onion, chopped
  • 2 to 3 stalks celery, chopped
  • 1 (16 oz.) can tomatoes
  • 1 Tbsp. lemon juice
  • 1 beef bouillon cube
  • 1 clove garlic, chopped
  • salt and pepper
  • 1 tsp. chili powder

    Soak beans overnight.

    Simmer everything listed for 3 hours, then take out pork hocks, discard skin, fat and bones.

    Cut up meat and return to soup.
