  • 1 1/2 cups dried spiral pasta
  • Salsa:
  • 1/2 Tbsp. olive oil
  • 3/4 cup onion, minced
  • 2 large cloves garlic, minced
  • 2 cups tomato, peeled and diced
  • 1/4 cup ketchup
  • 1 tsp. ground cumin
  • 2 tsp. raw sugar
  • Salt and black pepper to taste
  • Pinch of cayenne pepper to taste
  • Vegan Cheese:
  • 1 Tbsp. nutritional yeast
  • 1 Tbsp. cornstarch
  • 2 Tbsp. eggless mayonnaise
  • 1/2 cup water
  • 1/16 tsp. turmeric
  • 1/8 tsp. salt
  • 2 tsp. soy sauce
  • 1/8 + 1/16 tsp. balsamic vinegar
  • 3 cups ripe avocado, cut into 1/2-inch cubes
  • 6 large lettuce leaves
