- 3 ripe avocados
- 6 to 8 oz. baby shrimp, rinsed and drained
- 1/3 c. mayonnaise
- 1 Tbsp. parsley flakes or vegetable flakes
- 3 oz. Cheddar cheese, thinly sliced
- 1/4 tsp. salt
Directions

1Mix shrimp, mayonnaise, parsley and salt.

2Cut avocados in half and remove stones.

3Spoon shrimp mixture onto avocado.

4Top with cheese.

5Place under broiler.

6Cook just until cheese melts, about 1 to 2 minutes.
