  • 3 ears fresh or frozen corn on the cob, scraped of kernels
  • 3/4 c. grated Havarti cheese (or any white cheese)
  • 4 green onions, tops only, chopped
  • 1 1/2 ripe avocados, peeled and chopped
  • 1/2 c. heavy cream
  • 1/2 c. milk
  • 3 eggs, lightly beaten
  • 1/2 tsp. salt
  • dash of Tabasco
  • 10-inch partially baked pie shell *

Directions

    *Using your favorite pie crust recipe fit the dough into a 10-inch false-bottom quiche pan.

    Line with foil and fill with rice.

    Bake 10 minutes in a preheated 400° oven.

    Remove foil and rice and bake 5 minutes longer or until lightly colored.
