Plum Oatmeal Bread

Ingredients
- 2 c. all-purpose flour
- 2/3 c. sugar
- 1 Tbsp. baking powder
- 1 tsp. cinnamon
- 1 tsp. salt
- 1 c. quick cooking oats
- 1 (16 oz.) can purple plums, drained (reserve 3/4 c. juice), pits removed and plums chopped
- 1 egg
- 1/4 c. vegetable oil
Directions

1In mixing bowl, combine flour, sugar, baking powder, cinnamon, salt and oats.

2Stir chopped plums in flour mixture to coat well. Combine 3/4 cup plum juice, egg and oil; add to flour mixture, stirring just until dry ingredients are moistened.

3Pour into greased loaf pan.

4Bake in a preheated 350° oven for 1 hour, or until toothpick inserted in center comes out clean.

5Cool on wire rack 10 minutes.

6Remove from pan; cool completely.

7Yields 1 loaf.
