  • 1/3 baguette, cut diagonally into 12 x 1cm thick slices
  • Olive oil spray
  • 1 avocado Target 10 ea For $10.00 thru 02/06
  • 2 teaspoons lemon or lime juice
  • 1 tablespoon chopped parsley
  • Freshly ground black pepper, to taste
  • 1 - 1 1/2 tablespoons MY FIRST VEGEMITE

Directions

    SPRAY both sides of bread with oil.

    Place on a baking tray and bake in a hot oven 200oC for 10 minutes or until golden, turning once.

    SCOOP the avocado flesh into a bowl with juice and coarsely mash with a fork.

    Stir in parsley and season to taste.

    SPREAD toast with MY FIRST VEGEMITE then top with some avocado.

    Serve immediately.

    VARIATION: Try chopped ripe tomatoes, seasoned, in place of the avocado.
