Avocado Egg Salad

  • 4 hard-cooked shelled eggs, diced
  • 4 strips bacon, fried, drained and crumbled
  • 1 Tbsp. minced onion
  • 2 large avocados, halved and pitted
  • 2 Tbsp. mayonnaise or salad dressing
  • 2 tsp. lemon juice
  • 1/2 tsp. bottled mustard or to taste
  • salt to taste

Directions

    Combine eggs, bacon and onion.

    Cut and scoop avocado pulp and mash with a fork or large plate.

    Stir in mayonnaise, lemon juice, prepared mustard and salt.

    Add egg mixture; spoon into pretty glass cups.

    Garnish with leaf of lettuce.
