- 4 hard-cooked shelled eggs, diced
- 4 strips bacon, fried, drained and crumbled
- 1 Tbsp. minced onion
- 2 large avocados, halved and pitted
- 2 Tbsp. mayonnaise or salad dressing
- 2 tsp. lemon juice
- 1/2 tsp. bottled mustard or to taste
- salt to taste
Directions

1Combine eggs, bacon and onion.

2Cut and scoop avocado pulp and mash with a fork or large plate.

3Stir in mayonnaise, lemon juice, prepared mustard and salt.

4Add egg mixture; spoon into pretty glass cups.
