  • 1/4 tsp. Pepper
  • 1/4 c. packed fresh cilantro leaves and stems
  • 1/2 c. corn kernals
  • 8 corn tortillas
  • 1/2 c. shredded pepper Jack cheese

    In medium bowl, mash avocado with salt and pepper.

    Stir in cilantro leaves and stems and corn kernels; spread on 4 tortillas.

    In 12-inch skillet, in 2 batches, cook quesadillas on medium-high 3 to 5 minutes or until browned, turning over once.
