Avocado Sherry Bisque

Ingredients

  • 2 Tbsp. butter
  • 1 small onion, diced
  • 2 Tbsp. flour
  • 3 c. fresh chicken stock
  • 1 Tbsp. fresh lemon juice
  • 1/2 c. sherry
  • 2 garlic cloves, pressed
  • 1 tsp. salt
  • 1/2 tsp. black pepper
  • 2 ripe avocados, diced
  • 2 c. half and half
  • parsley, chopped
  • fresh tomatoes, chopped

Directions

    Melt butter in a large saucepan.

    Saute onion until soft. Stir in flour.

    Add chicken stock and cook until thick.

    Stir in lemon juice, sherry, garlic, salt and pepper and simmer for 15 minutes.

    Blend diced avocados with half and half until smooth. Add to saucepan and simmer for 10 minutes.

    Chill and serve garnished with chopped parsley.
