- 1 whole Eggplant
- 1 Tablespoon Olive Oil
- 2 cloves Garlic
- 1/4 cups Lemon Juice
- 1/4 cups Tahini
- 1/2 teaspoons Salt
- 1/4 teaspoons Cayenne Pepper
- 1/4 teaspoons Black Pepper
- 3 dashes Hickory Smoke Flavoring

2Slice eggplant in half.

3Brush olive oil on top, and place face down on a baking sheet.

4Bake for 30 minutes in a 350-degree oven (or until soft).

6Place all other ingredients in a food processor or blender, and blend till smooth.

7When eggplant is finished baking, let cool until it is workable.

8Scoop out the pulp (everything but the skin), and place in the food processor along with the other blended ingredients.
