- 2 None eggplants, halved lengthwise
- 1/2 cup low-fat yogurt
- 1 tbsp lemon juice
- 2 cloves garlic, minced
- 1 tsp tahini
- 1 tsp ground cumin
- 1/2 tsp sesame oil
- 2 tbsp finely chopped fresh cilantro leaves
Directions

1Preheat oven to 400°F.

2Arrange eggplants on an oven tray. Bake for 35 mins, or until tender. Let cool then remove and discard skin.

3Transfer eggplant pulp to a food processor along with remaining ingredients. Puree until smooth. Transfer to a serving bowl, cover and chill for 30 mins.
