- 8 -10 medium potatoes (2 1/2 to 3 pounds)
- 12 cup finely chopped onion
- 1 lb processed cheese, cubed (Velveeta)
- 1 cup mayonnaise
- 12 lb sliced bacon, cooked and crumbled
- 34 cup sliced ripe olives
- chopped fresh parsley (optional)
- paprika (optional)
Directions

1Peel the potatoes; place in a saucepan and cover with water.

2Cook until tender but firm; drain and cube.

3In a bowl, mix potatoes with onion, cheese and mayonnaise.

4Transfer to an ungreased 13 x 9 x 2 inch baking dish.

5Sprinkle with bacon and olives (if using).

6Cover and bake at 350 for 30 minutes or until heated through.

7Sprinkle with parsley and paprika if desired.
