Bacon Corn Bread

Ingredients
- 1 c. all-purpose flour
- 1 c. yellow cornmeal
- 1/4 c. sugar
- 4 tsp. baking powder
- 2 eggs
- 1 c. milk
- 1/4 c. cooking oil or shortening, melted
- 6 strips bacon, crisp cooked and crumbled
- 1 (8 oz.) container soft-style cream cheese
- hot pepper jelly
Directions

1Combine the flour, cornmeal, sugar, baking powder and 1/4 teaspoon salt.

2Add eggs, milk and cooking oil.

3Beat just until smooth (do not overbeat).

4Stir in bacon and turn mixture into a greased 13 x 9 x 2-inch baking pan.

5Bake in a 425° oven about 15 minutes; cool.

6Cut into 1 1/4-inch squares.

7To serve, spread each square with some cream cheese and a dollop of jelly.

8Makes 54 squares.
