Squash Casserole

Ingredients

  • 6 yellow squash
  • onion (according to individual taste)
  • approximately 3 Tbsp. butter
  • 1/2 handful Ritz crackers
  • milk (until pretty damp)
  • 1 egg, slightly beaten
  • cheese (however much you like)
  • pinch of salt
  • sprinkle or 2 pepper

Directions

    Boil squash and chopped onion to desired doneness; remove from heat.

    Add remaining ingredients, crumbling the crackers very fine.

    Add a little grated cheese to the mixture, reserving some for the top.

    Mix and pour into casserole dish; top with grated cheese and bake at 350° for approximately 30 minutes or until bubbly.
