- 8 slices bacon
- 1 cup robin hood all-purpose flour
- 1 cup purity cornmeal
- 2 tablespoons sugar
- 1 tablespoon baking powder
- 12 teaspoon salt
- 1 egg, beaten
- 1 (10 ounce) can creamed corn
- 12 cup milk
- 14 cup melted bacon drippings
Directions

1COOK bacon until crisp.

2Drain on paper towels.

3Crumble and set aside.

4Reserve 1/4 cup (50 mL) bacon fat drippings.

5COMBINE flour, cornmeal, sugar, baking powder and salt in mixing bowl.

6BEAT egg, corn, milk and bacon drippings together thoroughly.

7ADD liquid ingredients all at once to dry ingredients.

8Stir just until moistened.

9STIR in bacon.

10FILL greased muffin cups 3/4 full.

11BAKE at 375F (190C) for 15-20 minutes, or until top springs back when lightly touched.

12SERVE warm.
