Bacon-Leek Soup

  • 3 to 4 slices bacon
  • 2 leeks (tops included)
  • 1 carton mushrooms, cut in half
  • 5 c. water
  • 1 pkg. instant potato soup

Directions

    Cut slices of bacon into bits and place in stewpot.

    Saute until almost done.

    In the meantime, clean and cut up leeks, including the green part.

    Add to bacon.

    Saute until limp.

    Add mushrooms and cook for 5 minutes.

    Then add water and salt and pepper to taste.

    Simmer for 30 minutes.
