- 1/2 c. diced bacon
- 1 c. mashed potatoes
- 2 Tbsp. milk
- 1 tsp. baking powder
- 1/2 tsp. salt
- dash of pepper
- 4 well beaten egg yolks
- 4 stiff beaten egg whites
Directions

1Fry bacon and pour off excess bacon drippings.

2Combine mashed potatoes, milk, baking powder, seasonings and egg yolks; fold in egg whites.

3Pour into skillet; sprinkle bacon over top.

4Cook over low heat until puffed and brown.

5Fold over; garnish with parsley.
