Bacon-Spinach Carbonara

- 8 ounces sliced bacon
- 3 large egg yolks
- 3 large eggs
- 3/4 cup finely grated parmesan cheese, plus more for garnish
- 1 pound dried spaghetti
- 6 ounces baby spinach
- Kosher salt
- Freshly ground black pepper
Directions

1In a large heavy skillet, cook the bacon over medium heat until browned and crisp, 6 to 8 minutes.

2Transfer the bacon to paper towels to drain, reserving the fat in the skillet.

3Remove the skillet from the heat and let cool to warm.

4In a medium bowl, whisk together the eggs, yolks, and 3/4 cup cheese.

5Whisk the egg mixture into the cooled fat in the skillet.

6In a large pot of boiling salted water, cook the spaghetti until al dente.

72 minutes before the pasta is finished cooking, stir the spinach into the pot with the pasta.

8Reserve 1/2 cup of the pasta cooking water, then drain the pasta and spinach.

9Immediately add the hot pasta to the egg mixture in the skillet, turning with tongs to coat the spaghetti with the egg sauce.

10Stir in some of the reserved pasta cooking water if you prefer a looser consistency.

11Season the pasta with salt and pepper to taste, then serve, topped with the reserved bacon slices and additional cheese.
