Bacon Tomato Cups

  • 8 slices bacon, crisply cooked
  • 1 medium tomato, seeded
  • 1/2 small onion
  • 3 oz. Swiss cheese
  • 1/2 c. mayo
  • 1 tsp. basil
  • 1 can (10 oz.) refrigerator flaky biscuits

Directions

    Heat oven to 350°.

    Coarsely chop bacon, tomato and onion in food chopper.

    Grate cheese and mix all together, except biscuits. Set aside.

    Separate each biscuit into 3 thinner biscuits and lay over mini muffin cup.

    Using mini tart press dipped in flour, press each biscuit into cup.

    Fill with bacon mixture.

    Bake 10 to 12 minutes, until golden brown.

    Makes 30 appetizers.
