- 1/2 lb French green beans
- 1 lb halibut Salt, freshly grnd pepper
- 4 slc thin-sliced bacon
- 3 x cloves garlic
- 3 x green onions, minced
- 1/2 c. white wine
- 2 c. cherry tomatoes, halved Heat the oven to 425 degrees.
Directions

1Heat large saucepan of water to a boil; cook the green beans four min.

2Drain, set aside.

3Cut the halibut into 2 1/2-by-4 inch pcs.

4Season with salt and pepper.

5Wrap bacon around sides of the fish pcs, securing with kitchen string or possibly a toothpick.

6Heat an oven-proof skillet over high heat.

7Add in fish, bacon side down; brown on all sides, about two min.

8Place the pan in the oven; roast till fish is cooked, four to five min.

9Remove fish from the pan; keep hot.

10Drain all but 2 tsp.

12Add in garlic and green onions; cook one minute.

13Stir in wine; add in tomatoes, cook two min.
