- 1 c. flour
- 1 c. cornmeal
- 1/4 c. sugar
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1 tsp. salt
- 1 egg
- 1 c. sour milk
- 2 Tbsp. melted shortening

Directions

1Sift flour once before measuring.

2Sift flour, cornmeal, sugar, baking powder, soda and salt together.

3Beat egg and add milk.

4Combine with flour mixture.

5Add melted shortening and beat well.

6Fill greased muffin cups 2/3 full.

7Sprinkle tops with uncooked diced bacon.

8Bake 15 minutes in 400° oven, then set muffins under broiler so that bacon may become crisp.

9Yield: 8 muffins.
