Ingredients

  • 1 c. scalded milk
  • 1/4 c. butter
  • 1 Tbsp. sugar
  • 1 tsp. salt
  • 1 pkg. active dry yeast
  • 1 or 2 eggs
  • 3 3/4 c. all-purpose flour, sifted

Directions

    Combine scalded milk, butter, sugar and salt; let cool somewhat.

    Add dissolved yeast and blend in egg(s) and flour. Knead about ten minutes and let rise in greased bowl until double in bulk.

    Punch down and divide into 18 pieces.

    Let chill until easy to handle, then roll into ropes to form bagel.

    Let rise on covered board 15 minutes.
