- 1 c. scalded milk
- 1/4 c. butter
- 1 Tbsp. sugar
- 1 tsp. salt
- 1 pkg. active dry yeast
- 1 or 2 eggs
- 3 3/4 c. all-purpose flour, sifted
Directions

1Combine scalded milk, butter, sugar and salt; let cool somewhat.

2Add dissolved yeast and blend in egg(s) and flour. Knead about ten minutes and let rise in greased bowl until double in bulk.

3Punch down and divide into 18 pieces.

4Let chill until easy to handle, then roll into ropes to form bagel.

5Let rise on covered board 15 minutes.
