- 4 c. flour
- 2 tsp. salt
- 1 Tbsp. dry yeast
- 1 c. lukewarm water
- 2 eggs, separated
- 3 Tbsp. sugar
- 3 Tbsp. oil
- 3 qt. boiling water
- 1 tsp. cold water
- raisins and cinnamon (optional)
- blueberries (optional)
- dried onion flakes (optional)
Directions

1Sift 3 1/2 cups flour with salt.

2Soften yeast in half the water, stir into flour.

3Beat egg whites lightly.

4Add sugar, eggs and oil to remaining lukewarm water.

5Blend with flour mixture. Beat to make dough, adding more flour if needed.

6Add raisins and cinnamon.

7Knead until smooth.

8Place in oiled bowl.

9Cover with damp cloth.

10Let rise until doubled in bulk.

11Punch down until air is out.

12Pull off pieces of dough and roll into ropes.

13Moisten ends and squeeze slightly to seal.

14Let stand for 10 minutes. Slide a few at a time into boiling water.

15Turn after one minute. Cook one minute on other side.

16Remove.

17Mix egg yolk with 1 teaspoon cold water.

18Brush on top of bagels.
-
19Place on greased cookie sheet.

20Bake at 425° to 450° for 15 to 20 minutes.
