- 2-1/2 lb. grouper or other fish
- 1/3 cup oil
- 3/4 cup flour
- 1 small onion, chopped
- 1/4 tsp. thyme
- 2 Tbsp. tomato paste
- 3 Tbsp. tomato sauce
- 6 cups water
- salt and pepper
Directions

1Heat oil in skillet; blend in flour and brown well, stirring constantly to avoid burning.

2Add onion, thyme, tomato paste and sauce; mix well.

3Heat 6 cups water to boiling; add flour mixture and simmer for about 15 minutes stirring occasionally.

4Add fish, salt and pepper; cook for 20-30 minutes or until fish is tender.
