Ingredients

  • 1 3/8 cups whole milk
  • 1 1/2 cups whipping cream
  • 6 1/3 tablespoons evaporated milk
  • 5 tablespoons cream Baileys or other Irish
  • 2 teaspoons cornstarch
  • 1 vanilla bean
  • 1 pinch salt

Directions

    Whisk the cornstarch into the milk. Add to a saucepan with the cream, evaporated milk, and Baileys. Bring to a boil and stir constantly until thickened. Set aside to cool.

    Mix the Baileys mixture well and pour into popsicle molds. Place into the freezer.

    When slightly hardened, place a popsicle stick into each mold. Place in the freezer until completely frozen.
