- 2 medium acorn squash
- lemon juice
- 4 Tbsp. brown sugar
- butter or margarine
- 4 Tbsp. butter or margarine
- ground coriander
Directions

1Cut squash in half, scoop out seeds and spread butter over cut wedges.

2Place cut side down in a greased baking dish.

3Bake at 400° for 30 to 40 minutes or until tender.

4Turn cut side up; brush with lemon juice.

5Place 1 teaspoon butter in each cavity. Sprinkle 1 tablespoon brown sugar over each acorn squash half; sprinkle with coriander.

6Return to oven and bake about 5 minutes or until sugar has melted.

7Yields 4 servings.
