  • 2 lb. beans
  • 1 tsp. baking soda
  • 1/4 c. chopped onion
  • 1/2 c. maple syrup
  • 1/2 c. brown sugar
  • 1/4 c. molasses
  • 1/4 lb. salt pork
  • 1 tsp. dry mustard
  • scant tsp. salt
  • 1/2 tsp. ginger

Directions

    Soak beans overnight; drain.

    Cover with cold water and parboil them until skins burst.

    Place salt pork and onion in bottom of pot.

    Add beans and other ingredients.

    Cover with water.

    Bake at 350° until bubbly, then at 325° for 5 hours.
