Baked Cabbage

  • 2 Tbsp. butter
  • 2 Tbsp. flour
  • 1 1/2 c. milk
  • 4 to 5 c. coarsely cut cabbage
  • 1/2 c. (3 oz.) shredded pasteurized processed cheese
  • 1/2 c. cornflakes, crushed

    Make a medium white sauce. Melt butter over low heat. Add flour and cook a few minutes, stirring. Add milk and stir constantly until thickened, about 10 minutes. Salt and cook the cabbage with very little water until tender. Drain well. Combine cheese. Grease a large baking dish. Layer all of the cabbage, half of the cheese and all of the white sauce. Top with remaining cheese and sprinkle with cornflake crumbs. Bake at 350° until heated through and the cheese is golden brown, about 30 minutes. Makes 6 servings.
