- 1 head cabbage, coarsely chopped
- 1/2 cup olive oil
- salt and pepper
- 6 -8 slices bacon
Directions

1Place chopped cabbage in an oblong baking dish. Don't worry if dish is heaped up; the cabbage will wilt a lot while cooking.

2Drizzle olive oil over cabbage and sprinkle with salt and pepper.

3Cut each bacon slice into about three pieces and lay over cabbage to completely cover the casserole.

4Cover with foil.

5Bake at 400 degrees Fahrenheit for one hour.

6Remove foil and bake 30 minutes more to crisp bacon.
