  • 1 medium zucchini
  • 4 medium tomatoes
  • 3 Tbsp. minced onion
  • 1 tsp. oregano or Italian seasoning
  • 1 tsp. basil
  • 1/4 c. Caesar salad croutons
  • 1/4 c. shredded sharp Provolone cheese
  • pinch of red pepper flakes

Directions

    Combine vegetables in an ovenproof baking dish: tomatoes (peeled and diced) and zucchini (diced or thinly sliced). Sprinkle with seasonings, cheese and seasoned salad croutons. Bake, uncovered, in 400° oven for 35 minutes or more or until top is well browned.
