- 4 medium tomatoes
- 3 Tbsp. minced onion
- 1 tsp. oregano or Italian seasoning
- 1 tsp. basil
- 1/4 c. Caesar salad croutons
- 1/4 c. shredded sharp Provolone cheese
- pinch of red pepper flakes
Directions

1Combine vegetables in an ovenproof baking dish: tomatoes (peeled and diced) and zucchini (diced or thinly sliced). Sprinkle with seasonings, cheese and seasoned salad croutons. Bake, uncovered, in 400° oven for 35 minutes or more or until top is well browned.
