  • 6 quarts popped popcorn (approx 1 c unpopped)
  • 1 cup butter
  • 2 cups brown sugar
  • 12 cup light corn syrup
  • 1 teaspoon salt
  • 12 teaspoon baking soda
  • 1 teaspoon vanilla

    Preheat oven to 250 degrees.

    Pop popcorn.

    Thoroughly coat a large roasting pan with cooking spray.

    Add the popped popcorn to the pan and set aside.

    Combine the butter, brown sugar, light corn syrup, and salt in a 2 quart saucepan over medium-high heat.

    Stir constantly until the mixture comes to a boil.

    Remove from heat.

    Stir in the baking soda and vanilla (mixture will bubble and foam).

    Pour caramel over the popcorn and stir until thoroughly coated.
