- 6 quarts popped popcorn (approx 1 c unpopped)
- 1 cup butter
- 2 cups brown sugar
- 12 cup light corn syrup
- 1 teaspoon salt
- 12 teaspoon baking soda
- 1 teaspoon vanilla
Directions

1Preheat oven to 250 degrees.

2Pop popcorn.

3Thoroughly coat a large roasting pan with cooking spray.

4Add the popped popcorn to the pan and set aside.

5Combine the butter, brown sugar, light corn syrup, and salt in a 2 quart saucepan over medium-high heat.

6Stir constantly until the mixture comes to a boil.

7Remove from heat.

8Stir in the baking soda and vanilla (mixture will bubble and foam).

9Pour caramel over the popcorn and stir until thoroughly coated.

10Bake popcorn at 250 degrees for approximately one hour, stirring every 15 minutes.

11The caramel corn is ready when the caramel is no longer sticky.
