  • 1/4 c. cornmeal
  • 1 tsp. dried basil
  • 1 tsp. garlic powder
  • 1/2 tsp. dried thyme
  • 1/2 tsp. salt
  • 1/4 tsp. freshly ground pepper
  • 4 (4 oz.) farm raised catfish fillets
  • cooking spray

Directions

    Combine first 6 ingredients in a heavy-duty Ziploc plastic bag. Add fish; seal bag and turn gently to coat.

    Place fish on baking sheet coated with cooking spray.

    Bake on bottom rack of oven at 400° for 10 minutes on each side.

    Reduce heat to 350° and bake 5 minutes or until crust is golden and fish flakes easily when tested with fork.
