- 1/4 c. yellow cornmeal
- 1/4 c. Parmesan cheese, grated
- 1/2 tsp. black pepper, ground
- 1 egg white
- 4 (4 oz.) catfish fillets
- 1/4 c. all-purpose flour
- 1/2 tsp. salt
- 1/8 tsp. red pepper, ground
- 2 Tbsp. skim milk
- 1/2 tsp. sesame seed
Directions

1Combine first 7 ingredients; set aside.

2Whisk together egg white and milk.

3Drip fillets in milk mixture and dredge in cornmeal mixture.

4Place on a foil-lined baking sheet coated with cooking spray.

5Sprinkle fillets with sesame seed and coat each fillet with cooking spray.

6Bake in 350° oven for 30 minutes or until fish flakes easily when tested with a fork.

7Serve with lemon wedges.
