Baked Chicken Salad

Ingredients

  • 3 c. cubed cooked chicken
  • 2 c. chopped celery
  • 1/2 c. toasted almonds
  • 1/2 tsp. salt
  • 2 Tbsp. grated onion
  • 1/2 c. chopped green pepper
  • 1/2 c. mayonnaise
  • 1 can water chestnuts, chopped
  • 2 Tbsp. chopped pimiento
  • 2 Tbsp. lemon juice
  • 1 (10 oz.) can cream of chicken soup (undiluted)
  • 1/2 c. grated American cheese
  • 3 c. crushed potato chips

Directions

    Combine all ingredients (except cheese and potato chips). Toss lightly and spoon into 1-quart casserole. Spread cheese and chips on top. Bake at 350° for 25 minutes or until heated through and brown on top. Cut into squares and serve.
