Ingredients
- 1 lb. cod fillets, cut in 2-inch sq. pieces
- 4 medium potatoes, peeled and quartered
- 4 medium carrots, scraped and cut into 2-inch pieces
- 1 Tbsp. lemon juice
- 1 Tbsp. margarine
- 1 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/4 c. shredded Mozzarella cheese (made from partially skim milk)
- 1 to 2 Tbsp. chopped parsley
Directions

1Preheat oven to 375°.

2Slightly grease a 13 x 9-inch baking dish.

3Put fish pieces into the dish and sprinkle with lemon juice.

4Place carrots and potatoes between pieces and place dabs of margarine and pieces of potato over fish.

5Season with salt and pepper.

6Sprinkle cheese over all.

7Cover and bake 1 hour.

8Serve garnished with chopped parsley.
