Baked cod packets

Ingredients

  • Cod or any white fish (4 nice size fillets) approx 2 lbs.
  • 1 large onion - thinly sliced
  • 1 fennel bulb - thinly sliced
  • 1/2 cup pitted Kalamata olives - diced
  • Olive oil
  • salt
  • pepper
  • garlic powder
  • Parchment paper

Directions

    Dice onion, fennel and olives.

    Create four seperate piles.
  3. 3
    At this point, keep the olives seperate from the onion and fennel.
  4. 4
    Tear off large peace of paper, place on the bottom 1 pile of the onion and fennel.

    Lay 1 cod or any white fish fillet on top.

    Then place olives on top of fish.

    Season with salt, pepper and garlic powder.

    Drizzle olive oil over the fish.
  9. 9
    Fold up parchment paper to create a packet that the fish will cook in.

    Repeat until all 4 packets are done.

    Place horizontally accross a large cookie sheet.

    Cook at 400 for approx 20 minutes.
