  • 12 oz. vacuum packed corn
  • 1/2 c. chopped bell pepper
  • 1 small jar pimentos
  • 1/2 c. minced onion
  • 2/3 c. milk
  • 1 egg, well beaten
  • 1 box Jiffy cornbread, cooked and crumbled or 1 c. cracker crumbs
  • 1 c. grated cheese
  • 1/4 c. melted oleo

Directions

    Combine all ingredients; mix well.

    Pour into buttered 2-quart casserole or 9 x 13-inch cake pan.

    Bake at 350° for 1 hour.
