Ingredients

  • 1 onion
  • 1 bell pepper
  • 3 stalks celery
  • 2 c. cooked rice
  • 3 cans creamed corn
  • 1 1/2 c. grated sharp Cheddar cheese
  • 2 chopped jalapenos (optional)

Directions

    Chop and saute in butter the onion, bell pepper and celery. Mix and add rest of ingredients.

    Bake in 13 x 19-inch or two smaller pans for 1 hour at 350°.

    When using two, I freeze one.
