- 1 bell pepper
- 3 stalks celery
- 2 c. cooked rice
- 3 cans creamed corn
- 1 1/2 c. grated sharp Cheddar cheese
- 2 chopped jalapenos (optional)
Directions

1Chop and saute in butter the onion, bell pepper and celery. Mix and add rest of ingredients.

2Bake in 13 x 19-inch or two smaller pans for 1 hour at 350°.

3When using two, I freeze one.
