  • 1 (No. 2) can whole corn (do not drain)
  • 1 (No. 2) can creamed corn (do not drain)
  • 1 Jiffy corn muffin mix
  • 2 eggs
  • 1/2 bell pepper
  • 1 medium onion
  • 1 stick margarine

Directions

    Saute pepper and onion in margarine.

    Add dash of salt and pepper.

    Mix with corn, eggs and Jiffy muffin mix.

    Put in 9 x 13 x 2-inch pan and cook for 40 minutes at 400°.

    Good hot or cold. Grated cheese may be added if desired.
