Baked Creamed Corn

  • 8 ounces, weight Cream Cheese
  • 1/2 cups Butter
  • 37 ounces, weight Canned Corn, Drained
  • 1 whole Jalapeno, Minced
  • 1/4 cups Beer, Scant
  • Salt And Pepper, to taste

Directions

    Preheat oven to 350 F.

    In a large microwavable bowl, microwave the cream cheese and butter until butter has melted and cream cheese has softened, about 3 minutes. Whisk until mixture is smooth and lump-free.

    Add corn, jalapeno and beer and stir until combined. Adjust seasoning with salt and pepper. Pour into a 2 quart casserole dish.

    Bake for 30-40 minutes, until bubbling.

    Remove from oven and let creamed corn set for 15 minutes until it thickens a bit.
