- 2 medium eggplant
- 5 eggs
- 1 1/4 c. milk
- salt and pepper to taste
- 3 1/2 c. cracker crumbs
- 3 c. American cheese, grated
- 1 1/2 c. margarine, melted
Directions

1Peel, slice and boil eggplant until tender.

2Drain in colander 10 minutes.

3Put in bowl.

4Add eggs, milk, seasoning and half of crumbs, cheese and margarine.

5Pour into baking dish having mix about 1 inch thick.

6Sprinkle top with remaining crumbs and margarine.

7Bake at 450° for 20 minutes or until firm.

8Yields 8 to 10 servings.
