  • 1 large eggplant, diced, cooked and drained
  • 1 can mushroom soup
  • salt and pepper
  • 1/3 c. milk
  • 1/4 c. butter
  • 2 c. herb stuffing
  • 1 onion, chopped

    Mix all together. Be sure to season with salt and pepper. Bake 30 minutes at 350°. Grated cheese on top to finish as it will melt.
