- 1 medium eggplant
- 2 c. bread crumbs
- 1 can mushroom soup
- 1 medium egg
- 1 can peeled tomatoes, drained
- 1 tsp. black pepper
- 1 Tbsp. dry Ranch dressing mix
- 1 small pkg. Velveeta cheese
- 1 medium onion, chopped
Directions

1Peel eggplant; cut in 2-inch cubes.

2Parboil eggplant and onion; drain off excess water.

3Mix together all other ingredients; place in casserole dish.

4Place sliced Velveeta cheese on top.

5Bake for 25 minutes at 375°.
