Ingredients

  • sole or orange roughy
  • seasoned bread crumbs with extras of garlic and grated cheese
  • 1 small can tomato sauce
  • oregano
  • oil
  • bay leaves

Directions

    Rinse roughy in cold water.

    Dip each piece in oil and then in bread crumbs.
  3. 3
    Place on cookie sheet and put a tablespoon of tomato sauce on each piece of fish.

    Sprinkle oregano on each and place a bay leaf around the fish.
  5. 5
    Sprinkle a little oil around the bottom of the pan and cook for about 15 minutes at 350°, more or less, depending on the thickness of fish.
