Ingredients
- 1 (3 lb.) fish, dressed
- bread or mushroom force meat, well seasoned
- salt and pepper to taste
- 1/3 c. melted butter
- 3/4 c. hot water
- 4 strips bacon
- 1 strip cheesecloth
Directions

1Wash fish thoroughly.

2Rub inside and out with salt and pepper.

3Prepare highly seasoned bread or mushroom force meat. Stuff.

4Lay the fish straight in the cheesecloth with the back up, to resemble a live fish.

5Cover tail with strip of brown paper to prevent burning.

6Lay strips of bacon about 2-inches apart across fish.

7Bake uncovered at 350° for about 40 minutes.

8Baste every 10 minutes with 1/2 cup hot water and 2 tablespoons butter or a Spanish sauce.

9When ready to serve, remove paper from tail. Garnish with parsley, tomato slices, lemon and pickles.

10Make eyes of small stuffed olives.

11Serve with tartar or Spanish sauce.
