  • 1 lb. flounder or sole fillets
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 2 Tbsp. lime juice
  • 1 c. crushed crackers (about 30 Ritz)
  • 1/2 c. melted butter

Directions

    Heat oven to 350°.

    Make paste with crackers and butter.

    Pat fish dry.

    Add salt and pepper; sprinkle with lime juice.

    Roll in cracker and butter paste until covered.

    Place in 8 x 10-inch Pyrex dish.

    Crumble remaining cracker paste on top.

    Place in a brown paper bag; seal tight.

    Bake in 300° oven for 20 minutes.
