- 1 lb. flounder or sole fillets
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 2 Tbsp. lime juice
- 1 c. crushed crackers (about 30 Ritz)
- 1/2 c. melted butter
Directions

1Heat oven to 350°.

2Make paste with crackers and butter.

3Pat fish dry.

4Add salt and pepper; sprinkle with lime juice.

5Roll in cracker and butter paste until covered.

6Place in 8 x 10-inch Pyrex dish.

7Crumble remaining cracker paste on top.

8Place in a brown paper bag; seal tight.

9Bake in 300° oven for 20 minutes.
