  • 6 medium potatoes, sliced
  • 2 medium onions, sliced
  • 1 lb. filet flounder
  • salt and pepper to taste
  • 1/2 c. tomato juice
  • 1 pod hot pepper
  • 2 Tbsp. flour
  • 1/2 c. water

Directions

    Place sliced potatoes and onions in a baking dish.

    Salt and pepper to taste.

    Mix together tomato juice, pepper, flour and water and pour over potatoes and onions.

    Cover dish with foil and bake at 350° until potatoes are almost done.

    Place fish on top of potatoes and cook 15 minutes longer or until done.
